I found this DELICIOUS and AMAZING recipe for a Southwest Egg Roll - It does taste very very similar to the Chili's appetizer.
2 chicken breast fillet, diced
1 red bell pepper, minced
1/2 cup onion
1 can corn drained
1 can black beans, rinsed and drained
1 small can green chilies
½ T parsley
½ t cumin
½ t salt
Dash cayenne pepper
cheddar cheese, shredded
Flour Tortillas
Avocado-ranch dipping sauce:
1 c. ranch
1-2 whole avocado, mashed
3 tablespoons chopped cilantro
Salt & pepper
Blend together with blender
Cook diced chicken about half way then add the diced red pepper,onion, cumin, cayenne pepper, and salt. Once chicken is cooked then mix all ingredients together in pan. Sauté all ingredients until warm. Remove from heat. Warm tortillas. Place ½ c. or so of mixture and cheese to taste inside a tortilla. Fold and roll completely together so mixture cannot escape. Place inside a panni grill or George Forman to grill and melt cheese. Serve with dipping sauce.

Well I finally feel like I have time for emails and blogs again and yours brought a smile to my face. I WILL be trying some of your recipes out on the kids. Bub will be sad to miss it all, but I am glad you are having so much fun with your kids and your house while you wait for those interview calls to roll in. We miss you all!
